In our home, the main dish is more than just the centerpiece of a meal—it’s the heart of it. Whether it’s a Sunday roast, a skillet full of country-fried steak, or a humble plate of chicken and dumplings, the main dish is what gets everyone gathered around, sharing stories and passing plates. It’s what fills the house with comforting smells and makes suppertime something worth slowing down for.

When I think back on the meals I grew up with, I don’t remember fancy ingredients or complicated techniques. I remember the flavors, the full bellies, and the people around the table. That’s what main dishes are really all about—nourishing the body and feeding the soul.

During my childhood, money was tight, so my parents prepared meals out of whatever we grew on the farm or my brothers hunted. It never felt like we missed out. I do remember having rice and potatoes a lot. Now, as I am older, I have come to realize that rice and potatoes were used to make the meals go further when money was tight.

Over the years, I’ve gathered a collection of go-to main dishes that never let me down. Some come from my momma’s kitchen, some from trial and error, and a few were born out of using what I had on hand. Here are just a few of the recipes you’ll find here on the blog:

One of my favorite things about main dishes is how easily they can be adapted into other meals. A roast chicken on Sunday can turn into chicken salad, quesadillas, or soup by Tuesday. A big batch of spaghetti can feed the family tonight, and then show up as baked spaghetti later in the week. Around here, we call them leftovers, and most of the time I will place them in individual containers and pop it in the refrig so, we can have a good home-cooked meal for lunch the next day.
