Main Dishes
In our home, the main dish is more than just the centerpiece of a meal—it’s the heart of it. Whether it’s a Sunday roast, a skillet full of country-fried steak, or a humble plate of chicken and dumplings, the main dish is what gets everyone gathered around, sharing stories and passing plates. It’s what fills the house with comforting smells and makes suppertime something worth slowing down for.

When I think back on the meals I grew up with, I don’t remember fancy ingredients or complicated techniques. I remember the flavors, the full bellies, and the people around the table. That’s what main dishes are really all about—nourishing the body and feeding the soul.
During my childhood, money was tight, so my parents prepared meals out of whatever we grew on the farm or my brothers hunted. It never felt like we missed out. I do remember having rice and potatoes a lot. Now, as I am older, I have come to realize that rice and potatoes were used to make the meals go further when money was tight.
Down-Home Favorites from My Kitchen
Over the years, I’ve gathered a collection of go-to main dishes that never let me down. Some come from my momma’s kitchen, some from trial and error, and a few were born out of using what I had on hand. Here are just a few of the recipes you’ll find here on the blog:
- Smothered Pork Chops: Juicy chops cooked low and slow in a rich onion gravy—served over mashed potatoes, it’s comfort on a plate.
- Southern Fried Chicken: Crispy, golden, and seasoned just right, it’s perfect for Sunday dinner with biscuits and greens on the side.
- Chicken Pot Pie: A flaky crust filled with tender chicken, vegetables, and creamy sauce. It’s a hug in a pie dish.
- Meatloaf with a Brown Sugar Glaze: A classic that always hits the spot. Even picky eaters go back for seconds.
- Beef Tips and Rice: Tender chunks of beef simmered in savory gravy, ladled over a bed of fluffy white rice—simple and satisfying.
- Skillet Lasagna: All the flavors of a classic lasagna, but made in one pan and ready in under an hour.
Cook Once, Eat Twice
One of my favorite things about main dishes is how easily they can be adapted into other meals. A roast chicken on Sunday can turn into chicken salad, quesadillas, or soup by Tuesday. A big batch of spaghetti can feed the family tonight, and then show up as baked spaghetti later in the week. Around here, we call them leftovers, and most of the time I will place them in individual containers and pop it in the refrig so, we can have a good home-cooked meal for lunch the next day.
Tips for Tasty Main Dishes
Here are a few tricks I’ve learned over the years to make sure every main dish turns out just right:
- Start with good seasoning: Salt, pepper, garlic powder, onion powder—don’t underestimate the power of simple seasonings.
- Sear your meats: A quick sear in a hot skillet adds flavor and locks in juices, especially for roasts or stews.
- Use what you have: Don’t be afraid to get creative. Sub out vegetables, use different spices, and make it your own.
- Let it rest: Whether it’s steak, pork chops, or a roast, letting the meat rest before slicing keeps it juicy and tender.
- Don’t forget the sides: A great main dish shines even more when paired with simple, flavorful sides—think cornbread, roasted veggies, or a crisp salad.
I’ll share some of Momma’s most-loved recipes—some handed down from her old recipe box. I’ve tweaked others over the years to fit our tastes and pantry. From creamy chicken and rice to satisfying meatless options, these dishes are full of flavor and heart. Pull up a chair, grab a plate, and let’s make some memories together.
