Ingredients

  • 6 medium tortillas burritos sized
  • 6 large eggs
  • 1/4 cup of milk optional, for fluffier eggs
  • 1 cup of shredded cheese cheddar, pepper jack, or your favorite
  • 6 slices cooked Bacon crumbled (or 1/2 lb cooked sausage, or ham)
  • 1 cup cooked hash browns or diced potatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder optional
  • 1/4 teaspoon onion powder optional
  • 1 Tablespoon butter for cooking eggs substitute with bacon grease or oil

Instructions

Cooking the eggs

  • In a bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  • Heat butter, or oil in a skillet over medium heat, then scramble the eggs until just set. Remove from heat.

Assemble the Burritos

  • Lay out each tortilla and evenly divide the scrambled eggs, cheese, cooked bacon (sausage or ham), and hash browns.
  • Fold in the sides, then roll tightly into a burrito

Notes

I found it easier to fold the tortillas if I heated them up slightly before folding them.
